Introduction

Taiwan has one of Asia’s most celebrated food cultures — a Chinese-Japanese fusion that has produced uniquely Taiwanese dishes, invented boba (bubble tea), and created night market cultures that are extraordinary destinations in their own right.

Taiwan’s Signature Dishes

Beef Noodle Soup (Niurou Mian)

Taiwan’s national dish. Braised beef, thick wheat noodles, and a rich, dark soy-based broth. Each restaurant has a jealously guarded recipe.

Best in Taipei: Liu Shandong Beef Noodles (traditional, often queued), Yong Kang Beef Noodle (near MRT Dongmen), Din Tai Fung (chain, consistent).

Boba Milk Tea

Invented in Taiwan in the 1980s. Tapioca pearls (the “boba”) in sweet milk tea. Now global but the original versions in Taiwan are the benchmark.

Best brands: Tiger Sugar (brown sugar fresh milk tea, Instagram-famous), 50 Lan (consistent classics), Chun Shui Tang (claims to have invented it).

Scallion Pancake (Cong You Bing)

Flaky pan-fried dough with scallion. A common breakfast or street snack. Each layer should be distinct and crispy.

Stinky Tofu (Chou Doufu)

The most polarizing Taiwanese dish. Deep-fried or grilled fermented tofu that smells intensely pungent but tastes mild. Most famous at Shilin Night Market. Try it once.

Pineapple Cake (Fengli Su)

Taiwan’s most famous souvenir food. Buttery pastry filled with pineapple jam. Buy from established shops like Vigor Kobo or SunnyHills for quality versions.

Oyster Vermicelli (Oa-ah-mi-suann)

Thick starchy noodles with oysters in a thick sauce. A unique Taiwanese texture experience. Available at night markets.

Taiwan Night Markets

Shilin Night Market (Taipei): The largest. The fried chicken cutlet (ji pai) here is legendary — enormous, crispy, spiced with basil.

Raohe Street Night Market (Taipei): Smaller, more manageable, excellent black pepper bun (oven-baked in a wood-fired drum — queue of about 20 minutes, worth it).

Ningxia Night Market (Taipei): Local favorite. Less touristy than Shilin. Excellent for sitting down with beer and snacks.
