Essential Korean Dishes

Korean BBQ (Gogi-gui)

Meat grilled at your table — the most social Korean eating experience. Order samgyeopsal (pork belly), bulgogi (marinated beef), or galbi (short ribs). Wrap grilled pieces in perilla leaf or lettuce with garlic, ssamjang paste, and kimchi.

Best areas in Seoul: Mapo neighborhood for samgyeopsal, Hongdae for varied BBQ options.

Kimchi

Fermented vegetables — usually cabbage (baechu kimchi) — seasoned with chili, garlic, ginger, and fish sauce. Eaten with every meal. Korea’s most important dish and UNESCO Intangible Cultural Heritage.

Types: Over 200 varieties. Baechu (cabbage), kkakdugi (radish), oi sobagi (cucumber).

Bibimbap

Steamed rice topped with seasoned vegetables, egg, and gochujang (red chili paste). Mixed before eating. The Jeonju style (from Jeonju city) is the most celebrated.

Tteokbokki

Cylindrical rice cakes in spicy gochujang sauce. Street food staple. Available at pojangmacha (street stalls) everywhere.

Korean Fried Chicken

Double-fried for extra crispness, then sauced (soy-garlic or spicy). Served with beer (chimaek = chicken + maekju). One of Korea’s great comfort foods.

Japchae

Glass noodles (sweet potato starch) stir-fried with vegetables and beef. Slightly sweet, beautifully colored.

Sundubu Jjigae

Silken tofu stew with seafood or pork, egg, and gochujang. Served bubbling hot in a stone pot. Best as a warming meal.

Samgyetang

Whole young chicken stuffed with rice, ginseng, dates and garlic, simmered in broth. Traditional summer dish for stamina.

Naengmyeon

Cold buckwheat noodles in chilled beef broth with cucumber, pear, and boiled egg. Refreshing summer dish.

Korean Street Food

Hotteok: Sweet filled pancakes with brown sugar, nuts, and cinnamon. Best in winter.

Gimbap: Seaweed rice rolls with vegetables, egg, and meat. Korea’s lunch box food.

Sundae: Blood sausage with glass noodles. Acquired taste but popular at pojangmacha.

Eomuk (fishcake): Skewered fishcakes in broth. Classic street snack.

Korean Food by Region

Seoul: Everything, but best for Korean fried chicken and Korean BBQ.

Busan: Seafood — dwaeji gukbap (pork rice soup), fried mullet.

Jeonju: Bibimbap capital. Also known for makgeolli (rice wine).

Gyeongju: Bread with red bean filling (Hwangnam ppang), traditional Silla-era foods.
